GIOVANNI DI SERIO
Inspired by his home town of Torino in Northern Italy, Chef de Cuisine Giovanni ‘Gio’ Di Serio brings an exquisite fresh menu to Modo Mio.
Having spent over 25 years of his life in the kitchen, Gio has extensive experience cooking across a series of restaurants throughout Spain, UK and Italy. Throughout his vast experiences working in hotels and restaurants around the world, Gio has discovered a passion for making his dishes evoke all five senses, using his food to communicate the origin of the produce.
Upon arriving to Australia, Gio was introduced to seafood from a new origin, where he became inspired to expand his palette and cook with the unique flavours that Australian seafood offers.
Pairing these fresh flavours with the elevated academics of Italian cooking, Gio’s cuisine is created with purpose, with each dish meticulously planned from ‘sketch to plate’.
Leading the kitchen at Modo Mio, Gio has devised a menu that integrates traditional Northern Italian flavour combinations with quality sourced authentic ingredients and artistically inspired technique.
