5 Minutes with the Chefs

What made you decide to start a career as a chef?
My parents ran a seafood restaurant on the South Coast of Poole where I had my first job washing and peeling potatoes. As far back as I can remember I have enjoyed the comradery of being in the kitchen and have been working as a Chef ever since.

What is your approach to leading the kitchen?
I believe motivation is key, keeping myself and my team motivated to learn and to create is very important. Seeing the customers leave happy is what keeps me motivated.

Where does the inspiration for your desserts come from?
My inspiration comes from everyday life. Whether it’s a piece of fruit, a colour or something in nature. I particularly like creating ones that will surprise the customer with every bite. I like to tell a story with my dishes, which is why plated desserts are my favourite.

What would be your advice to an aspiring chef?
I would say that it’s a challenging but very rewarding industry. You will constantly learn and meet new and interesting people. Be patient and dedicated and good things will come.

What is your favourite dish to cook?
I very much enjoy cooking Thai food. There is such a complexitity in balancing the elements of sweet, sour, salty and spicy. It’s very rewarding and delicious when you achieve this.

If you could travel anywhere, where would you go?
I lived in France for 12 years and I would love to go back, it’s such a special place. The country has so much to offer, I could try a new dessert every day and learn something new. A new flavour combination, or technique.
