What is the most important lesson you have learnt in your career so far?
Balance is crucial. I value balance in my life and in the kitchen.

What is your favourite dish to eat and favourite dish to cook?
My favourite dish to eat is the Spaghetti Seafood Pasta from Market & Co, I love the combination of chilli and garlic – but to cook, my favourite will always be a nice piece of steak. Simple and delicious.

If you could travel anywhere to learn more about their cuisine where would it be?
Scandinavia, particularly Norway. I love their clean and precise techniques, I think it would be very insightful and delicious.

When did you know you wanted to be a chef?
I have always wanted to be a chef, my biggest inspiration was my Grandfather who was a famous chef in my hometown Kandy. He was so passionate about having the best and freshest ingredients and he instilled that into me.

What is your favourite dish to eat and favourite to cook?
My favourite to eat would be sukiyaki with wagyu, you can’t beat the flavours in this. To cook would be fish, I like cooking healthily and from the ocean.

What’s it like leading such a large team preparing for the buffet?
Being a chef at a buffet is very different to an a la carte restaurant. Everything we do is on such a large scale, it’s a great challenge and I really enjoy it.
