A beautiful strawberry mousse with a hidden heart of strawberry compote, draped in a shimmering peach veil and crowned with a strawberry rose takes the plate’s stage. Across from a crunchy hazelnut and cardamom meringue, known in Italy as Brutti ma Buoni (“Ugly but Good”), paired with smooth rose Chantilly cream and rose jam.
