Meet the chef

Guillaume Brahimi, Head Chef

One of Australia’s most popular chefs, Guillaume Brahimi realised his passion for cooking at an early age. As a young man he trained at three-star Michelin restaurants La Tour D'argent and Jamin’ in Paris, before moving to Australia.

Having received many awards and accolades for his Pond and Quay restaurants, Guillaume opened his highly acclaimed restaurant, Guillaume at Bennelong in Sydney in 2001. The restaurant currently holds two Chef Hats in the Sydney Morning Herald Good Food Guide, with a rating of 17/20 and also holds a 3-star rating in the Gourmet Traveller’s Restaurant Guide.

Today, you can enjoy Guillaume’s creations at a host of restaurants in Sydney, Melbourne and at Bistro Guillaume in Perth.

Meet the chef

Robert Murphy, Chef de Cuisine

At just 14 years of age, Robert began his first apprenticeship at a small waterfront restaurant on the Central Coast. Robert went on to develop his culinary expertise at some of the country’s most esteemed restaurants, including Basil’s Seafood Restaurant and Berowra Waters Inn, then taking on leadership roles at Olio, Garfish, Aria and Johah’s Relais and Chateaux.

With over 15 years of industry experience, Robert has cooked for a host of impressive celebrities including Taylor Swift, Lady Gaga, Novak Djokovic, and respected chefs Heston Blumenthal, Matt Preston, Manu Fidel and Neil Perry.

Robert is honoured to head up the kitchen at Guillaume Brahimi’s award-winning Bistro Guillaume in Perth and he lives by the code that ‘good food is the basis of true happiness.’

Meet the Sommelier

Michele Nociti, Sommelier & Restaurant Manager

Michele was born in Puglia, in the South of Italy. Instilled into him, was an appreciation for good food and wine, a trait passed onto him from his father that helped guide him towards an incredible career in hospitality across the world.

Michele began his adventure after he completed his diploma at the National Institute of Hotel and Restaurant Studies in Brindisi, Italy. He then went on to complete his third level Sommelier course in 2008 which classed him a professionally recognised Sommelier. Michele has extensive knowledge of international wines, in particular Italian, gained through study and experience with Accor Group Hotels.

Since joining the team in 2019, Michele has brought to Crown an impressive wealth of knowledge in both hospitality and all things wine. He encourages the appreciation of wine in the restaurant he manages, from educating his employees to his customers. In March of 2019 he commenced his first wine course for Crown’s employees and now has up to 50 students per course. Michele held his first Masterclass series at Bistro Guillaume in October of 2021 and has since hosted a series of sold-out events covering a range of insightful topics.

Choose from round tables set within the signature green surrounds of the restaurant, perfect for up to 30 people, the secluded semi-private dining room, that will cater from 16 up to 20 guests or the outdoor terrace with a view of the resort-style pool can accommodate up to 50 guests for cocktail-style events.

Your seats will be held for 15 minutes post your reservation booking time.

Cancellation policy

Credit card details are required to secure this reservation. No charges will be processed on your card at the time of booking. Should you wish to cancel or make changes, please contact us on 08 9362 7551 at least 12 hours prior to your reservation, or a cancellation fee of $50 per person will be charged to the card provided. For groups of 10 or more, we require at least 48 hours’ notice to avoid a cancellation fee of $50 per person.
