Chef de Cuisine Damiano Montagnese has travelled thousands of kilometres to work at Crown Perth’s premium Italian restaurant, Modo Mio
Damiano grew up in a small village in the region of Calabria, south of Italy and spent much of his childhood helping his family in the garden to grow and gather seasonal produce. Damiano explains that where he comes from food is one of the most important things of the day – “people wake up in the morning thinking about what they will cook for lunch or dinner.”
When it came time to choose his study path, Damiano knew he wanted to go to culinary school and study a diploma in hospitality. He completed five years of study in the space of four years and graduated at the top of his class.
Damiano then spent five years travelling around Italy learning the intricacies of all different types of Italian cuisine. The next step in his career was his move to England where he worked for four years at the prestigious Savoy Hotel. This opportunity significantly expanded his culinary knowledge and fine-tuned his already impressive skills.
In 2013, at just 26 years of age Chef Damiano moved to Perth where he began his Crown career at La Vie Champagne Lounge
. Twelve years later he was drawn back to his love of Italian cuisine and commenced work at Modo Mio as Senior Chef de Partie, which then led to his recent promotion to Chef de Cuisine.
“I’m excited to start this new chapter as Chef de Cuisine and intend to combine my heritage and years of experience to produce a modern twist on traditional Italian food at Modo Mio,” explained Damiano.
Damiano inherited his passion for Italian food from his family and loves making wholesome food that brings people together. This mirrors the Italian meaning of Modo Mio, My Way, which is all about celebrating the heart of Italian culture where food and family are central to everyday life.
