Launching in Modo Mio, courtesy of new Chef de Cuisine Andrea Tranchero, will be a series of ‘spotlight menus’ featuring hand-picked signature dishes that will change regularly giving diners the opportunity to try an eclectic mix of Chef’s Favourites and traditional Italian dishes.

Chef Tranchero has expertly crafted a superb balance between authentic Italian recipes and his own contemporary style, and each spotlight menu will feature three personally created exquisite and unique dishes.

The Piedmont Toma Cheese flan served with Bresaola, button mushrooms and blueberry sauce is close to his heart. Toma is a classic cheese originating from the Piedmont region, home to Tranchero, who has put a modern twist on this delicious family recipe.

For something very special, indulge in the grilled wagyu sirloin and wagyu cheeks dome, braised red cabbage, porcini mushroom and veal jus. The dish boasts beautiful marble wagyu beef cooked two ways.

Chef Tranchero has created a sautéed lobster with saffron risotto cake, Japanese scallops and creamy tarragon sauce which is served as a share plate for two. This dish features a succulent West Australian crayfish and ‘Milano style’ crispy rice, and Japanese scallops add a fresh, modern take to an Italian classic.

Introducing Andrea Tranchero – our new Chef de Cuisine at Modo Mio

A graduate of the prestigious ‘Istituto Professionale Alberghiero di Stato’ culinary school in Italy, Chef Tranchero is Michelin trained and has lead the kitchen at various well-reputed establishments, from Bice in the Four Seasons Hotel to the world- class Armani Restaurant Ginza, located within the most expensive shopping strip of Toyko.

With countless accolades throughout his 25 year career, Tranchero credits two-Michelin starred Chef Claudio Sadler as his invaluable mentor and was personally selected by Sadler to lead the team at his Sadler and L’Estasi restaurants in Tokyo and Milan.

Tranchero enjoyed spending time in the kitchen as a child and growing up he recalls memories of his mother’s delicious, hearty stews during the cold winters in Cuneo, located in the Piedmont region of Northern Italy, and also credits his love and passion for cooking to his grandmother – even showcasing some of her special recipes on the Modo Mio menu.

With many credits to his name, including being personally selected to cook for Richard Branson and President of the Italian Republic, Giorgio Napolitano, it is no wonder former Chef de Cuisine Giampaolo Maffini has the utmost confidence in Tranchero’s talents. As Maffini’s ‘right hand man’ since the opening of Modo Mio, Tranchero has been poised to continue and develop the restaurant’s impeccable reputation as its Chef de Cuisine.

Chef Tranchero is enjoying leading his team in the kitchen at Modo Mio, and is looking forward to delivering a little piece of authentic Italy on every plate, each served with its own modern twist.
