Friday, 22 March 2013 - Crown Perth staff help make a difference this Easter

The Staff Team at Crown Perth have once again really gotten behind the Easter Appeal for The Salvation Army, making generous donations of chocolate eggs, bunnies and sweet treats to ensure that children in need do not miss out on Easter Treats!

A dedicated collection point was set up in the Staff Dining Room at Crown Perth for the duration of the Appeal, and a huge collection box full of eggs is being presented to The Salvation Army next Tuesday morning at 0930, prior to the Easter break in order that chocolate distributions can be made!

Crown Perth’s very own Easter Bunny personally visited each and every department at the resort for a final round of chocolate collections which gave the donations a final boost.

Crown Perth’s Chief Executive Officer Barry Felstead said that staff had once again demonstrated outstanding support for this appeal.

“Our staff place high importance on contributing to a number of important charity campaigns every year, and we are proud to partner with The Salvation Army to run this annual Appeal. Many people requiring assistance rely on the work of The Salvos who show great generosity and compassion for those in need, said Mr Felstead.

Warren Palmer, Communications & Fundraising Secretary said “Easter is one of those times of the year which brings joy for children and a time of reflection to our community. It is once again a blessing to be able to receive such generosity from the staff at Crown Perth and to pass this on to those who continue to struggle with significant financial pressures.”

The Salvation Army is one of the largest and most diverse social welfare providers in the world providing a wide range of services to more than 1 million Australians every year.

Thursday, 7 March 2013- UPDATE ON INCIDENT AT CROWN PERTH

At approximately 11.30am today at Crown Perth, a gas leak was detected in a back of house maintenance area. As a result of the leak the Fire Brigade was called and attended. The back of house areas located nearby were evacuated. A small number of staff members have subsequently been conveyed to hospital for observation and treatment. There are no life threatening injuries. The Fire Brigade took control of the situation which resulted in an area being isolated and the leak contained. The Fire Brigade at 1.45pm gave the all clear for the whole of the area to be reoccupied. The Fire Brigade did not require any public areas to be evacuated.

Crown Perth would like to thank the Fire Brigade and St John’s Ambulance services for their prompt and professional assistance.

Wednesday, 6 March 2013- Crown Perth wins Employer of the Year at Polytechnic West Training Awards

The Polytechnic West Training Awards were held on 27 February at the Bentley Campus, recognising the achievements of outstanding students, trainers and employers from 2012.

Crown Perth was honoured to be the recipient of the Employer of the Year Award in the Commerce and Hospitality Division.

Executive General Manager of HR, Damir Kucan, accepted the award on behalf of Crown Perth, acknowledging the growth in apprenticeships and traineeships that has occurred at the resort over the last 12 months.

“We are incredibly proud to receive this accolade - it acknowledges our commitment to training across the business. In the last year, the number of employees engaged in accredited training has grown from 395 to 884,” said Mr Kucan.

Crown Perth also sponsored two awards at the event – the Aboriginal & Torres Strait Islander Student of the Year won by Taylor Jane Bellotti, and the Apprentice of the Year Emma Bain, who also took home the prestigious Geof Gale Medal on the evening.

Polytechnic West (PWA) is Western Australia’s largest state training provider offering training to over 32,000 students annually including approximately 9,000 apprentices and trainees.

Launching in Modo Mio, courtesy of new Chef de Cuisine Andrea Tranchero, will be a series of ‘spotlight menus’ featuring hand-picked signature dishes that will change regularly giving diners the opportunity to try an eclectic mix of Chef’s Favourites and traditional Italian dishes.

Chef Tranchero has expertly crafted a superb balance between authentic Italian recipes and his own contemporary style, and each spotlight menu will feature three personally created exquisite and unique dishes.

The Piedmont Toma Cheese flan served with Bresaola, button mushrooms and blueberry sauce is close to his heart. Toma is a classic cheese originating from the Piedmont region, home to Tranchero, who has put a modern twist on this delicious family recipe.

For something very special, indulge in the grilled wagyu sirloin and wagyu cheeks dome, braised red cabbage, porcini mushroom and veal jus. The dish boasts beautiful marble wagyu beef cooked two ways.

Chef Tranchero has created a sautéed lobster with saffron risotto cake, Japanese scallops and creamy tarragon sauce which is served as a share plate for two. This dish features a succulent West Australian crayfish and ‘Milano style’ crispy rice, and Japanese scallops add a fresh, modern take to an Italian classic.

Introducing Andrea Tranchero – our new Chef de Cuisine at Modo Mio

A graduate of the prestigious ‘Istituto Professionale Alberghiero di Stato’ culinary school in Italy, Chef Tranchero is Michelin trained and has lead the kitchen at various well-reputed establishments, from Bice in the Four Seasons Hotel to the world- class Armani Restaurant Ginza, located within the most expensive shopping strip of Toyko.

With countless accolades throughout his 25 year career, Tranchero credits two-Michelin starred Chef Claudio Sadler as his invaluable mentor and was personally selected by Sadler to lead the team at his Sadler and L’Estasi restaurants in Tokyo and Milan.

Tranchero enjoyed spending time in the kitchen as a child and growing up he recalls memories of his mother’s delicious, hearty stews during the cold winters in Cuneo, located in the Piedmont region of Northern Italy, and also credits his love and passion for cooking to his grandmother – even showcasing some of her special recipes on the Modo Mio menu.

With many credits to his name, including being personally selected to cook for Richard Branson and President of the Italian Republic, Giorgio Napolitano, it is no wonder former Chef de Cuisine Giampaolo Maffini has the utmost confidence in Tranchero’s talents. As Maffini’s ‘right hand man’ since the opening of Modo Mio, Tranchero has been poised to continue and develop the restaurant’s impeccable reputation as its Chef de Cuisine.

Chef Tranchero is enjoying leading his team in the kitchen at Modo Mio, and is looking forward to delivering a little piece of authentic Italy on every plate, each served with its own modern twist.
