Crown Perth is proud to announce that Modo Mio’s Chef de Cuisine Andrea Tranchero has been selected to represent Australia at the 2013 Pasta World Championships!

As part of the “Italian Cuisine in the World Forum,” Academia Barilla will host the second annual World Pasta Championship at their campus in Parma, Italy, from 12-15 June 2013.

The competition celebrates the most important ingredient of Italian Cuisine along with the talent of chefs of Italian cuisine working outside Italy, and also highlights how this much loved cuisine is cooked and consumed outside of its home country.

Having competed in last year’s inaugural competition, Chef Tranchero has been chosen again from a selection of Australian based Chefs to compete along with Italian Chefs from around the globe, with only four Chefs going through to the finals for the chance to win the prestigious title.

Chef Tranchero is looking forward to impressing the judges with his exquisite spaghetti chitarra with roast chicken, green apple and foie gras.

He will also show off his talents on a world stage, cooking a five-course menu along with two Michelin star Chefs at the Gala dinner on the first night of the forum.

Introducing Andrea Tranchero

Having travelled the globe working in Italy, Paris, USA, Japan, and China, Chef de Cuisine Andrea Tranchero has brought to Modo Mio his superb balance between traditional Italian recipes and his personal contemporary style, as well as some special recipes that have been in his family for generations.

As well as offering a magnificent range of delicious Italian classics, Chef Tranchero has introduced speciality dishes from Piedmont, the northern Italian region where he was born.

“My food is about passion, memories and love. These dishes have been in my family for years, passed down over generations, and truly represent my food philosophy,” says Chef Tranchero.

A graduate of the prestigious ‘Istituto Professionale Alberghiero di Stato’ culinary school in Italy, Chef Tranchero is Michelin trained and has lead the kitchen at well-reputed establishments such as Bice in the Four Seasons Hotel to the world-class Armani Restaurant Ginza, located within the most expensive shopping strip of Tokyo.

Receiving countless accolades throughout his 25 year long career, Chef Tranchero was personally selected to cook for Richard Branson and President of the Italian Republic, Giorgio Napolitano. He credits Claudio Sadler as his invaluable mentor and culinary inspiration.

The Merrywell crowned WA's Best Steak Sandwich winner! - 01 May 2013
We are excited to announce that The Merrywell’s ‘Decadent Cheese Steak Sandwich’ was crowned WA’s Best Steak Sandwich.

The five metropolitan finalists in the competition battled it out in the grand final ‘cook-off,’ with a panel of three judges sampling some of the best steak sandwiches in our state.

“Now in its sixth year, this popular competition continues to raise the gastronomic quality of pub steak sandwiches throughout the state,” said AHA(WA) CEO, Bradley Woods.

The Merrywell’s Chef de Cuisine Rob Ryan served up his unique creation and it was love at first bite for the judges, who included Channel Seven’s Today Tonight reporter Graeme Butler, Paul Murray from 6PR and Tony Vitelli from beverage company Lion.

The panel enjoyed the mouth-watering combination of ingredients in The Merrywell’s steak sandwich, which consists of shaved Wagyu rump, truffle aioli, sticky balsamic, provolone cheese, mushrooms, sautéed onion, chives and sliced pickled beetroot in a fresh bread roll.

“We have a winning combination of delectable ingredients of the highest quality, artisan suppliers who care and a great team who provide the consistency required to cook a fantastic product every time,” said Rob.

With over 150 steak sandwiches served every week at The Merrywell, the decadent take on the traditional steak sandwich has proven to be a popular hit amongst Perth diners.

As a result of the win, The Merrywell has now been entered as a finalist in the AHA-Aon Hotel & Hospitality Awards for Excellence ‘WA’s Best Steak Sandwich’ category.

The Australian Hotels Association (WA) has been on the hunt for WA’s best metropolitan pub steak sandwich.

“The steak sandwich is a highlight of any pub menu because it pulls together everything that is great about a pub, from the home style cooking to the locally grown produce,” said AHA(WA) CEO, Bradley Woods.

Together with the support from Tourism Western Australia and beverage company Lion, makers of James Squire craft beer, the AHA searched metropolitan WA to find the best steak sandwich available at one of the region’s great pubs.

Open to metropolitan venues, the competition was judged by venue patrons and the general public through an online voting system.

The voting process then determined five finalists from the metropolitan area. Each finalist was then invited to compete in the steak sandwich cook-off, held at the AHA Hospitality Expo at Crown Perth on Wednesday, 15 May at 2pm on the Expo Main Stage.

Crown Perth will continue a long-running tradition this ANZAC Day, donating part-proceeds from the Aussie game of Two-up to the RSL WA branch.

Two-up runs at the Casino all year round, and Crown Perth has supported the RSL on ANZAC Day since the resort opened, making the 27 year relationship the longest standing community partnership for Crown Perth.

Every year, we pause to commemorate the contribution made by all past and present servicemen and women, and as a mark of respect, the Casino is closed on ANZAC Day from 3am re-opening at 12 noon on Thursday, 25 April.

Chief Executive Officer, Barry Felstead said that Crown Perth placed high importance on their long-term relationship with the RSL.

“Each year, our staff and patrons remember the courage and sacrifices made by our ANZACs and we are incredibly proud to stand alongside and support the RSL WA branch with their ongoing support to veterans, which is a very important service to our community,” said Mr Felstead.

Upon re-opening, Crown Perth will offer a special lunch deal on ANZAC Day where RSL members can enjoy fish and chips with a soft drink for just $5.00 upon presentation of an RSL membership card. This offer is valid for two people and is available only on Thursday, 25 April 2013. Snax is a snack bar located in the Casino at Crown Perth, and is an 18+ venue.

Crown Perth Commis Chef wins WA stage of international cooking competition

Michael Hull, a 23 year old Commis Chef from Thornlie, has beaten a field of talented competitors from around the state to win the Western Australian stage of the prestigious Jeunes Commis (Junior Chef) Competition held on Tuesday, 16 April at Crown Perth. 

The competition was held by international gastronomic society Chaîne des Rôtisseurs and competitors found out what ingredients they would have to cook with when the “black box” of compulsory items was unveiled that morning, leaving them with three hours to design, prepare and plate a three course menu for the tasting judges.

In his four years at Crown Perth, Michael has received mentorship from Crown Perth’s Executive Sous Chef Sean Marco, Banquets Chef de Cuisine Matt Horne and last year’s Crown Perth Demi Chef Travis Simmonds.

In June 2013, Michael will travel to the Gold Coast to represent Western Australia in the competition for the national Jeunes Commis title.

The Chaine des Rôtisseurs is a prestigious international association, dedicated to celebrating the art of French traditional and modern cooking through national and international competitions.
