Crown Perth’s premier flagship Chinese restaurant Silks is now open, offering diners a visionary and culinary journey which will set the benchmark for Chinese cuisine in Perth.

Adding to Crown’s expanding five-star premium dining portfolio, Silks is now the largest restaurant at the property with five private dining rooms including a sky dining room on a second-storey level and panoramic views of the city and Swan River.

The design of Silks has created a setting which encompasses the elegance and delicacy of Chinese culture and the attention to detail within the venue is apparent yet discreet.

The Silks team has been hand-picked with the master of Chinese cuisine Pat Cheong leading the kitchen team and having recently worked in Macau under Jade Dragon restaurant’s Michelin-Starred Chef Tam.

From the menu, guests can expect an array of exquisite and authentic Cantonese and multi-regional dishes. Dim Sum Head Chef Sam Feng champions a dedicated dim sum menu with more than 18 items available, and there is also a delectable range of desserts and a traditional Chinese tea menu.

It’s the end of an era for The Dome at Crown Perth and the demolition process is now underway.

It’s the end of an era for The Dome at Crown Perth and the demolition process is now underway, with the deflation of the roof marking the first major milestone in this massive deconstruction project which will pave the way for 1,120 new car parking bays.

The demolition of such a large building results in a significant amount of debris and leftover materials; the roof alone is 16,000 square metres and the venue included a total of 16,154 seats with capacity to hold another 5,600 people on the arena floor.

Crown Perth had a key focus on choosing a demolition process that minimised our impact on the environment and is working with contractor Probuild Constructions (Aust) Pty Ltd to recycle 99% of all materials from the iconic Dome venue, including concrete, steel, copper, aluminium, stainless steel, wiring, plastic and loose furniture.

The breakdown of recycled materials from the project is as follows:

- 25,000 tonnes of concrete,
- 2,000 tonnes of steel,
- 300 tonnes of copper, aluminium and stainless steel, - 150 tonnes of plastic,
- 50 tonnes of wiring, and
- 10 tonnes of loose furniture.

In total, approximately 27,510 tonnes of material from The Dome demolition will be recycled, which is the weight of around 67 fully loaded Boeing 747 aeroplanes!

The Crown Conservation program at Crown Perth has a focus on reducing environmental impact by pursuing meaningful activities in recycle management, as well as water conservation, food waste and energy efficiency: parts of the Dome will be used in new, state-of-the-art building projects which seems only right as when it was built in 1987, it was considered a market leader and a first for Australia!

- The next development in The Dome deconstruction project will be the demolition of the actual structure, which will begin early next week, starting with the West wall. After the wall is reduced to ground level, the demolition will progress to the southern, then eastern, then northern facades of The Dome.

- Once The Dome demolition is complete a new car park facility with an additional 1,120 free car parking bays will be created, providing patrons with easier and improved access to Crown Perth, with the new car park expected to be complete in late 2013.

- The Dome has been an iconic Western Australian landmark, and over last 26 years the venue has played host to hundreds of international performers, sporting events and bands from around the globe.

Crown Perth, WA schools and Foodbank WA collaborate to assist the community - 05 July 2013
More than 420 students from 14 West Australian schools took part in ‘Prepare Produce Provide’.

More than 420 students from 14 West Australian schools took part in ‘Prepare Produce Provide’, a community project organised in conjunction with Foodbank WA, Crown Perth apprentice chefs, FutureNow, ECU, CCIWA Apprenticeship Solutions, Programmed and the Home Economics Institute of WA. The students produced nearly 7,000 meals which have been distributed through Foodbank WA to assist people in need in Western Australia.

Over the last 4 months, Crown Perth apprentices provided mentorship to the school students using their knowledge and skills to assist in planning, preparing and producing the meals: in turn the students have now met a number of competencies across Certificate I & II in Hospitality over Terms 1 & 2 of 2013.

To celebrate the culmination of the project, the inaugural Prepare Produce Provide “Live to Tell Your Story” Expo was held at Crown Perth. With more than 24 exhibitors, the Expo attracted more than 400 secondary school students. The very last meal prepared by the students under this project, was presented live on stage to Foodbank WA CEO Greg Hebble. Foodbank WA distribute more than 55,000 meals each week.

Shane Crawford, legendary Brownlow medalist, BCNA Ambassador and The AFL Footy Show personality, is currently embarking on his biggest challenge yet - riding his bike across Australia to raise vital funds and awareness for Breast Cancer Network Australia (BCNA).

The 3,600 kilometre Tour de Crawf – Ride to the other side is a massive 22-day marathon in which Shane has been averaging 170 kilometres a day and has seen him pass through many Aussie towns - with Crown Perth his last stop!

Channel 9 will broadcast The AFL Footy Show live from Crown Perth prior to Shane’s arrival, with Garry Lyon, James Brayshaw and Sam Newman delivering the latest news and entertainment from the footy world.

Sydney, 15 May 2013 - In another first, Mr James Packer, Crown Chairman announced today that they have signed a new culinary partnership with internationally renowned restaurateurs; Neil Perry and Guillaume Brahimi who have been have been appointed by Crown Melbourne to serve as Culinary Directors for the next three years.

In their newly formed role of Culinary Directors, Perry and Brahimi will combine their expertise and culinary greatness to influence all menus across Crown Hotels, Events and Conferencing, as well as overseeing some of Crown’s finest restaurants such as Rockpool Bar and Grill, Bistro Guillaume, Rosetta, Spice Temple and Silks.

Ensuring all guests to Crown have a world-class dining experience, Perry and Brahimi will work with the company to support training and mentoring of the culinary team working across all Crown Melbourne venues, comprising appx 510 employees. The pair will also provide guidance in all culinary appointments, personally train and develop Crown’s apprentices, and mentor and coach Crown’s leading chefs in all premium outlets.

Neil Perry stated: “I’m very excited to be working with Crown, the very best hotels in Australia to ensure that the room service and banquet offering is as world-class as the hotels. Working with and in the culinary training institute is going to be another wonderful opportunity to help support our great industry.”
